Top 5 Overrated Top 5 Underrated

“Franklin BBQ Brisket Recipe

The beauty of this recipe is how simple it is.”

Mt top 5s are:

Overrated: (besides BYU of course)
Donuts/cupcakes/birthday cake (loved them until a few months ago, they just make me sick thinking about them)
Pasta (the kind you find at most places with loads of overly thick sauce). Makes me sick every time
BBQ: Yeah, it’s meat, it tastes good. Guys around here act like you are a sissy if you don’t cook on your Traeger every weekend. Smoked meat is only good when you have it no more than 5 times in a year, after that it’s just meh.
Prime Rib: I’m sure this CAN be great, but it almost never is. Usually waaaay under seasoned.
Pho: see below

Underrated:
Ramen: nothing in this world is better than great ramen. A wonderful complexity of flavor, and textures, plus there is nothing like sitting in a crammed ramen shop slurping noodles with a bunch of strangers. I’ve had pho at a number of places, and the flavor complexity just isn’t there. Also, I prefer the texture of ramen noodles. Also, I never feel heavy after eating a bowl of ramen. All the satisfaction of a great steak or brisket without feeling disgusting afterwards.
bagels: much better than donuts
cookies/brownies: all the best parts of cake, without the unnecessary fluffiness and frosting.
Sushi: Is it possible for great sushi to be overrated? No, no it’s not. Great flavor complexity, balancing of textures (soft, smooth, chewy, crunchy)… all in one bite. Similar to ramen, all the flavor/texture and enjoyment with none of the heavy feelings afterward.
dumplings: steamed, fried, steamed then fried… so much variety, so delicious when done right.

The best brisket is often the cheapest, lowest quality, and unhealthiest thing out there, but that’s only half of what makes it great. The other half is preparation. Yes, brisket by itself isn’t special, but what meat is?

Hell, show me any natural veggies or meats that really taste good. I love broccoli and asparagus, but only after it has been soaked in butter. I really enjoy Costa Vidas sweet pork, but it has nothing to do with the meat itself. I love peanut butter, but completely natural peanut butter is pretty meh. You must slay at parties.

Best brisket I ever had was wagyu beef. Next best was actually bison. Incredible flavor. Not all beef is created equal. The breed and what they are fed make a huge difference in the flavor.

We have some of the best rocket scientists, heart surgeons, cancer specialists here…but the science behind cooking a brisket is so complicated it confounds everyone, you can only find a good brisket in Kansas City.

My wife has never been anywhere near Kansas City, and she makes the best brisket I’ve ever had.
