Best brisket I ever had was wagyu beef. Next best was actually bison. Incredible flavor. Not all beef is created equal. The breed and what they are fed make a huge difference in the flavor.

We have some of the best rocket scientists, heart surgeons, cancer specialists hereā¦but the science behind cooking a brisket is so complicated it confounds everyone, you can only find a good brisket in Kansas City.
My wife has never been anywhere near Kansas City, and she makes the best brisket Iāve ever had.
