Baked Beans with lots of Bacon
Air Fried Fries with Horsy Fry Sauce

Tomorrow is hella yard work, but tonight is food!

Smoked some ribs with Blues Hog Tennessee Red sauce. Also stuffed some peppers with a mixture of Italian bread crumbs, chopped shrimp, onion, celery, and cheese.

The Easter ham will be ham hock soup with cornbread tonight. Started boiling the bone this morning.

This time of the year has some great “leftover meals.”

I’ve been working with a new sourdough starter. So far I’ve made a cornbread, and in the morning some pancakes or waffles. Later this week I’ll attempt my first loaf of bread.

The cornbread was surprisingly good. A touch of the sourdough tasted with the sweetness of regular cornbread, and a mix of the 2 textures. I would and will make again.

The pancakes turned out pretty damned well. A touch sour, as you’d expect, and a nice bounce and chew to them. I only made them plain, but adding berries or whatever else you like feel like they’d to well.

Got the bread proofing right now. I’ll probably know more tomorrow about it’s texture and flavor.

1st loaf of sourdough. Smells great. I think I over proofed it because it didn’t right much in the oven, and did in my bowl prior to forming and baking. Life and learn. Texture is off too.

Flavor is really good. So, it looks like I need to work on my technique.

Tomorrow the daughter needs to prep up some fry bread so I can make the Dineh taco recipe I found tonight. The topping for the fry bread were spice shaved beef, black beans, fried kernel corn with fried peppers, shredded lettuce, and pico de gallo.

It will either be magic, or a big meh.

Ok, an addendum to my sourdough adventures. Pancakes and waffles are great.

Bread, not so much as of yet. The flavor continues to be good, texture is hit and miss, and therefore so is overall size. Still pretty flat.

I’m going to give my best effort to kolaches, since they’re relatives of the pancakes and waffles, at least with the ingredients (butter, cream or milk, starter, and flour). Fillings are a breeze, cherries, or sweetened cream cheese or whatever I find that catches my fancy.

Try different types of flour. I found some of the special flour types work better for sourdough than others.

Yeah, it’s a hit and miss experiment.

I’ll probably go back to bread flour for bread vs the AP. The 1st loaf was better formed with bread flour. Been using AP since, and things have seemed off.
