I happened across this YouTube and realized that she was teaching the same technique I learned to use on my own. I felt vindicated. Or at least affirmed. Or something like that. Post your own ideas if you feel like it.
Exactly the way i always cook eggs - i learned from watching my mother do the same thing.
My mother also always added a little whole milk to the eggs as she was beating them, they come out a little lighter.
My wife does neither, so consequently, my son always asks me to cook eggs

The milk and a good mixer make the difference.
Now a little bacon grease gives them a nice flavor too.
That’s more or less the technique I use but I use a higher temperature. As long as you keep the eggs moving they will be fluffy and not over cooked.
